blueberry muffins

Can you tell I'm on a breakfast baking kick? :) But really, I love to bake, and what's better than a warm, homemade breakfast? Found this recipe on Pinterest described as the "perfect" blueberry muffin recipe, but I'm not yet sold with that description. That being said, they are still really yummy and wonderful.

what you'll need:
  • 5 Tbsp. unsalted butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 3/4 sour cream or plain yogurt (I used SC)
  • 1 1/2 cup all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp salt
  • 3/4 fresh blueberries (frozen can work too)
how you'll do it:
 preheat oven to 350* and line muffin pan with liners
 with a hand mixer, blend butter, egg, and sugar

add sour cream or yogurt and blend until smooth

sift flour, baking powder, baking soda, and salt into bowl

blend until all ingredients are combined

fold in blueberries with wooden spoon, the scoop out into muffin tins

makes about 12 muffins

Viola! Enjoy! Add more blueberries as you wish :)

healthy fruit pizza

Another Pinterest jewel, I am so excited to share this recipe with y'all! If you have ever had fruit pizza before, you should be excited. This is a healthier version, but before you see that the first ingredient is whole wheat flour and have the sudden urge to run away quickly, don't worry! I don't think you lose anything by not using the typical sugar-cookie crust. And one of the best parts about this recipe is that you can use whatever fruit you want or have! Yum!

what you'll need:
  • crust:
    • 2 1/2 cups whole wheat flour
    • 2 tsp. baking powder
    • 6 Tbsp. brown sugar
    • 1/2 tsp. salt
    • 1/2 tsp. cinnamon
    • 2/3 cup milk
    • 1/4 cup olive oil
  • icing:
    • 8 oz. whipped cream cheese
    • 1 Tbsp. brown sugar
how you'll do it:

preheat oven to 350*
in a bowl, combine flour, baking powder, brown sugar, and cinnamon

 make a well in flour mixture and add milk and olive oil

stir with wooden spoon until thoroughly mixed--will be a crumbly texture

mix sugar and cinnamon in a small bowl
*note: the amounts are not listed in ingredient list, use what you see needed

pinch off some dough, roll into a ball, then flatten. 
dip in cinnamon sugar on both sides and 
place on non-stick sprayed cookie sheet.
bake for about 10 minutes

while crusts are baking, combine cream cheese and brown sugar

for ease, put icing in a plastic bag, cut away corner, and squeeze icing onto crusts 

top with fruit of your choice


Viola! A cute, pretty, fun, and very yummy dessert! 

Variation: 
  • Okay, so as I was making and taste-testing the icing, it just tasted super cream-cheesy (which makes sense, since it is). But since I married a cream cheese hater, and am very cautious to disguise it every time I use it while cooking (which is frequent) I thought I better figure out a way to mask the cream cheese flavor. So I added a little butter and some powdered sugar until it tasted a little more like the icing for my favorite Clone of a Cinnabon cinnamon rolls. So, this is a "less healthy" variation, but who really cares anyways? ;)
